Chicken Marsala - brandon devine
Ingredients:
4 boneless, skinless chicken breasts Extra Virgin Olive Oil 4 oz Prosciutto 8 oz Porcini Mushrooms 1/2 cup Marsala Cooking Wine 1/2 cup Chicken Stock 2 Tbs Salted Butter Parsley |
Instructions:
-Butterfly each breast, removing any fat. Dredge in flour seasoned with salt & pepper. Fry in a preheated skillet with extra virgin olive oil.When chicken is fully cooked, remove from pan. -Add prosciutto and mushroom to the skillet and cook until mushrooms are a caramel color. -Add Marsala cooking wine and cook for one minute. Then add chicken stock. Once the sauce thickens add butter. -Cut the chicken and return it to the pan. Serve with fresh parsley. Insight: What is prosciutto? How is it made? |
