Pastry Cream
Ingredients: 2 Cups Milk 1/2 Vanilla Bean 6 egg yolks 2/3 Cup Sugar 1/4 Cup Cornstarch 1 Tablespoon Unsalted Butter Instructions: Slit vanilla bean Bring milk & vanilla bean to a simmer Turn off heat and set aside Scrape seeds from bean & add back to milk Whisk yolks, sugar, & cornstarch Whisk 1/4 cup hot milk into yolk mixture Add yolk mixture to milk Cook over medium heat, whisking continually until thickened Remove from heat & stir in butter Cover in plastic wrap & chill |
Pate a choux
Ingredients: 1 Cup Water 1 Stick Unsalted Butter 1/2 teaspoon Salt 1 1/2 teaspoons Sugar 1 Cup Flour 3 Eggs Instructions: Preheat oven to 425' Line a cookie sheet with parchment paper Bring water, butter, salt, & sugar to a boil Take off heat, add flour, & mix Return to heat for 30 seconds, stirring continually Take off heat Add eggs one at a time, fully incorporating each before adding the next Pipe dough onto cookie sheet Bake 15 minutes at 425' Reduce heat to 375' and bake for an additional 20 minutes |
Ganache
Ingredients: 1/4 Cup Heavy Cream 4 Tbs Chocolate Chips Instructions: Measure chocolate into a bowl Bring heavy cream to a simmer Pour cream over chocolate and stir until smooth Construction
When eclairs have cooled, fill each with pastry cream using a piping bag, dip in ganache and let chill. |
