Ingredients:
3 Medium, Firm Green Tomatoes Salt 1 Cup Flour 1 Tbs Cajun Seasoning 1/2 Cup Milk or Buttermilk 1 Egg 1/3 Cup Cornmeal 1/2 Cup Fine Dry Bread Crumbs 1/4 Cup Vegetable Oil |
Instructions:
Slice & Salt Tomatoes: Cut unpeeled tomatoes into 1/2 inch slices and sprinkle with salt. Let stand for 5 mins. Set out Breading Bowls: Fill one bowl with Flour & Cajun Seasoning. Fill the second with Milk & Egg. Whisk. Fill the third with Cornmeal & Bread Crumbs. Bread Tomatoes: Dip each tomato slice in flour, then egg, then crumbs. Fry: Fry the Tomatoes on medium heat in vegetable oil until golden brown on both sides. |
